Home-Made with Hopgood's Foodliner

In this latest edition of Home-Made, we turned to chef Geoff Hopgood who gave us two recipes from his namesake restaurant, Hopgood's Foodliner.

Geoff, a Nova Scotia native, his passion for cooking began after moving to Toronto. After culinary school he worked for former Rosedale hotspot Pastis before spending three years apprenticing in the kitchen at the Royal York Hotel.

After a stint at the Black Hoof Cafe, Geoff decided to strike out on his own. Drawing inspiration from his youth in the Maritimes, he opened Hopgood's which has consistently made Toronto restaurant best of lists since opening in 2012.

Enjoy Geoff's recipes for Oatcakes and Pickled Shallots!



3 cups rolled oats

3 cups All purpose flour

1 cup granulated sugar

½ teaspoon salt

1 cup Lard

1 cup cold butter cut in small cubes

½ cup cold water


Mix all the dry ingredients.

Cut the lard and butter in to the flour mixture until you achieve a coarse uniform texture.

Add the water and knead the dough until it comes together.

Rest the dough in the fridge for 1 hour.

Using a rolling pin, roll the dough to a ¼  inch thick.

Cut the dough with a circle cutter to your desired size. (We like them about the size of a ritz cracker)

Bake at 350f for 8 min, then rotate the tray and bake for another 8min.

Pickled Shallots

5 shallots peeled and sliced thinly on a mandolin.

1 ½ teaspoons of salt

1 teaspoon granulated sugar

1 cup white vinegar

Combine the salt, sugar and vinegar and bring to a boil to make a brine.

Pour the brine over the shallots and let pickle over night.
